Weeki Wachi Roll-Ups

I wish I was a Weeki Wachee Mermaid! Weeki Wachee Springs State Park in Florida has been home to the Weeki Wachee mermaids since 1947. The mermaids put on shows underwater in the springs every day. If that doesn't float your boat you can take a river boat cruise and canoe or kayak on the Weeki Wachee River. You can also visit Buccaneer Bay, a water park that utilizes the spring water and has lovely white sandy beaches.

Ingredient List
  • 1/2 cup cream cheese, softened
  • 1/2 teaspoon dried chives
  • 4 ten inch whole wheat tortillas
  • 1/2 cup hummus
  • 1 cup shredded carrots
  • 1/2 cup sprouts
  • 1/2 cup sliced cherry tomatoes
  • 4 leaves romaine lettuce, thinly sliced
  • 1/2 cup crumbled feta or grated mozzarella (use the feta for a stonger flavor)
In a small bowl, combine cream cheese and chives. Using a small spatula, spread the cream cheese mixture evenly over each tortilla within about 1 inch of the edge. Spread a think layer of hummus over the cream cheese. Layer carrots, sprouts, tomatoes, and lettuce and then sprinkle with cheese. Carefully roll up each tortilla. Wrap each tortilla roll tightly in plastic wrap and chill for at least half an hour or until ready to serve. To serve slice each roll into three pieces.
